The Valentine’s Day recipe

February 14 is Valentine’s Day. If you would like to surprise your loved one with something homemade, just rattle some pots and pans. We have a delicious recipe for you, prepared with seasonal vegetables. The ingredients are, of course, for two.

What you need on your shopping list:

  • 100 g risotto rice
  • 1 bottle white wine (for the risotto and the chef)
  • 200 g black salsify
  • 100 ml whipped cream
  • 1 large or 2 small shallots
  • 80 g butter
  • 350 ml vegetable stock (store bought or homemade)
  • a splash of olive oil
  • pine nuts
  • salt/pepper and nutmeg
  • 1 lemon
  • fresh thyme

How do we bring all that to the plates?

First peel the black salsify. Use disposable gloves to prevent staining your skin. Press the juice out of the lemon and lay the peeled black salsify sticks in a large bowl. Cover with cold water and then add the lemon juice. It gives the root a light color.

Cut the shallots into cubes. Place the pan onto the hot cooking surface, add the butter and glaze the shallot cubes. Add the risotto rice to the pan and also brown lightly for a pleasant aroma.

Meanwhile, cut half of the salsify into approx. 2-3 cm pieces and add to the pan. Now for the wine – douse with a generous splash and let it cook in a bit.

Stir, stir, stir

Once the wine has cooked off/been absorbed, add the stock. But not all at once. The rice should not be floating, but not burn either. Then add the whipped cream and season with salt, pepper, and nutmeg. The rice is now finished.

Cut the rest of the salsify root lengthwise in half and glaze in a separate pan with a bit of oil or butter and sprinkle with salt and pepper. While they slowly brown, add the pine nuts and 2-3 stalks of thyme and leave on the flame for a further 3 minutes.

Arrange everything and serve to your sweetheart. That’s what we do!
